Cut in shortening with pastry blender or 2 knives until mixture has texture of quick-cooking oatmeal.
Add milk; stir with fork to make soft dough.
An extra tablespoon of milk may be used if mixture seems too stiff.
Place on lightly floured board, and knead gently 8Ã¢â‚¬â€10 times.
Roll or pat dough to desired thickness, and cut with floured cutter.
Pat leftover dough together, and cut again.
Place biscuits on ungreased baking sheet, close together for soft-sided biscuits or about 1 inch apart for crusty ones.
Bake 12Ã¢â‚¬â€15 minutes at 450Ã‚Â°F.
Makes 18Ã¢â‚¬â€20 biscuits (approximately 1 3/4 inches in diameter).
