Baked Virginia Ham Recipe
Ingredients
Country-style Virginia ham - 10- to 12-lb
Whole cloves
Dark-brown sugar - 1 cup, firmly packed
Dry mustard - 1 teaspoon
Pineapple juice - 3 tablespoons
Cider vinegar - 1 tablespoon
Directions
GETTING READY
1. Cover ham completely with cold water and let it stand for 24 hours.
2. Next day, scrub ham with stiff brush and rinse well in cold water.
MAKING
3. In large kettle, cover ham with cold water and bring to boiling.
4. Reduce heat; simmer, covered, 4 to 5 hours until ham is almost tender.
5. Remove from heat and let it cool in liquid.
6. Preheat oven to 325F.
7. Remove cooled ham from liquid and carefully remove skin and excess fat.
8. With tip of knife, cut fat into diamond pattern without cutting into ham.
9. Insert a clove in each diamond and in shallow roasting pan place ham on rack.
10. Insert meat thermometer in center, away from bone.
11. Bake, uncovered, 2-1/2 hours.
12. In a bowl combine remaining ingredients and spread over ham.
13. Bake 15 minutes longer until internal temperature is 155F.
14. For easy slicing, let stand 20 minutes.

15. Serve with garnish as desired.
