Ingredients
4 large baking potatoes
1 cup sour cream
Vegetable oil
Salt and pepper
1/4 cup butter
Paprika
Directions
Preheat the oven to 400° F.
Rub the potatoes with a little oil.
Bake the potatoes at 400° F for 1 hour or until done.
Cut the potatoes in half lengthwise and scoop out the potato.
Reserve the potato shells.
Mash the potato with the butter, sour cream, and salt and pepper to taste.
Stuff the potato shells with the mixture.
Sprinkle lightly with paprika.
Place the potato halves in an ovenproof casserole.
Bake at 400° F for 10 minutes or until lightly browned.
