Baked Stuffed Eggplant Recipe
Ingredients
2 eggplants, parboiled, whole stuffing
Directions
Cut eggplant in half.
Scoop out pulp to within 3/4 inch of skin.
Dice pulp and blend with filling.
Pack into eggplant shell, Place in shallow pan.
Bake at 350° F. for about 30 minutes.
