Baked Stuffed Cod Recipe
Ingredients
| 2 cod fillets (each about 3/4 lb/375 g) 2 | ||
| 2 tbsp butter, melted 25 mL | ||
| Butter | 2 Tablespoon (Savory Dressing:) | |
| 1 onion, minced 1 | ||
| Carrot | 1 Small, diced (Savory Dressing:) | |
| Savory | 2 Teaspoon, dried (Savory Dressing:) | |
| Salt | 1/2 Teaspoon (Savory Dressing:) | |
| Pepper | 1/4 Teaspoon (Savory Dressing:) | |
| 1-1/2 cups coarse slightly dry bread crumbs 375 mL | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Savory Dressing: In small skillet, melt butter over medium heat; cook onion and carrot until softened, about 5 minutes.
Stir in savory, salt and pepper; cook for 2 minutes.
Remove from heat; stir in bread crumbs.
Place one fillet in greased shallow ovenproof dish.
Top evenly with dressing.
Place remaining fillet over top.
Drizzle with butter; season with salt and pepper to taste.
Bake, uncovered, in 400°F (200*C) oven for 15 to 20 minutes or until fish flakes easily when tested with fork.
Stir in savory, salt and pepper; cook for 2 minutes.
