Baked Spanish Mackerel Recipe
Ingredients
| 1 medium-sized mackerel | ||
| Green pepper | 1/2 Teaspoon, minced | |
| 2 cupfuls bread crumbs, medium stale | ||
| Summer savory | 1/4 Teaspoon | |
| Onion | 1/2 Small, minced | |
| Bacon Slices | 3 | |
| Bacon | 1 Tablespoon, minced | |
| Salt | 1/3 Teaspoon | |
| Few grains pepper | ||
Directions
Mix together the bread crumbs, onion, chopped bacon, green pepper, and seasonings, and spread on the fish, which should be dressed for broiling.
Place a slice of bacon on this and fold over the fish so that the dressing shows.
Place on a trivet in a baking-pan, lay the remaining bacon on top of the fish, and bake 30 min. in a hot oven of 425° F., basting frequently with the fat in the pan.
Serve on a platter decorated with alternating rings of green pepper and sliced lemon.
Accompany with the following sauce:
Mix together 2 tsp. chopped green pepper, 4 tbsp. mayonnaise, 3 tbsp. chilli sauce, and use at once.
