Ingredients

 
Cornish hens with livers-2, 1 pound
 
Onion-1/4 cup, finely chopped
 
Mushrooms-2 tablespoons, finely chopped
 
Ham-1/2 cup, finely chopped
 
Butter-1 cup, melted
 
Bread crumbs-2 cups
 
Salt-1/2 teaspoon
 
Pepper-1/4 teaspoon
 
Poultry seasoning-1/2 teaspoon
 
Egg-1, lightly beaten
 
Parsley-1 teaspoon, chopped
 
Bacon-4 slices
 
White wine-1/2 cup

Directions

GETTING READY
1)Chop livers.

MAKING
2)In a pan, add ½ cup butter and sauté livers, onion, mushrooms and ham. Put them into large bowl and cool.
3)Fold in crumbs, seasonings, egg and parsley and mix well.
4)Fill the mixture into the hens, securing neck and body openings. Tie wings.
5)Crisscross bacon strips on breasts of hens.
6)Put them on baking rack.
7)Bake at 400 degrees for 1 hour, basting frequently with remaining butter and wine.

SERVING
8)Serve on bed of seasoned wild rice.
