1 cup cooked rice
 
1 cup grated cheese
 
2 tblspn, butter
 
Hot sauce
 
1 small sweet chilli, chopped finely
 
1 grated onion
 
1 tspn, salt
 
1 cup milk
 
cayenne pepper

Directions

Melt the butter in a pan, add the onion, chilli.
Salt and hot sauce and cook together until soft.
Mix into the rice.
Place a third of the mixture into a greased baking dish and sprinkle half of the cheese over it.
Repeat with another layer of rice (one-third), add the rest of the cheese and finish with the remaining third of the cheese.
Shake some cayenne over it and pour the milk over the mixture.
Bake with the lid off in a moderate oven (350°F.) for 30 minutes.
