 Flour1⁄2 Cup (8 tbs)
 Salt1⁄2 Teaspoon
 Pepper1⁄4 Teaspoon
 Butter/Oil2 Tablespoon
 Chopped onion1 Cup (16 tbs)
 Garlic1 Clove (5 gm), minced
 Ground ginger1 Teaspoon
 Canned applesauce1 Pound (1 Can)
 Sauterne wine1⁄2 Cup (8 tbs)
 Soy sauce1⁄2 Cup (8 tbs)


Flatten tenderloins slightly with cleaver; rub both sides with flour seasoned with salt and pepper.
Brown in butter; transfer to oven-serving dish.
Pour off all but 2 tablespoons fat.
Brown onion and garlic slightly.
Stir in ginger.
Mix together applesauce, wine, and soy sauce; stir into onion mixture.
Simmer 1 minute; pour over pork.
Bake 1 hour in preheated 350°F oven
