Baked Pork Chops With Barbecue Sauce Recipe

The baked pork chops with barbecue sauce is a simple baked pork chops recipe with potatoes. Cooked with a barbecue sauce mix of ketchup, worcestershire sauce, vinegar, chili, mustard, onion and garlic, the roasted pork chops can be served with a fresh salad.

Ingredients

 
1 cup chili sauce, homemade 250 mL or commercial
 
1/2 cup ketchup 125 mL
 
1 tbsp Worcestershire sauce 15 mL
 
2 tbsp rice vinegar or cider vinegar 25 mL
 
1 tsp ground cumin 5 mL
 
1/4 cup brown sugar 50 mL
 
2 tbsp Dijon mustard 25 mL
 
1 chipotle, minced, or 1
 
1 jalapefio, finely chopped, optional
 
1 onion, finely chopped 1
 
2 cloves garlic, minced 2
 
2 lb baking potatoes, peeled and cut 1 kg
 
in 1/4 inch/5 mm slices
 
6 pork chops, 3/4 inch/2 cm thick, 6
 
trimmed of all fat (6 oz/175 g each)

Directions

In saucepan, combine chili sauce, ketchup, Worcestershire, vinegar, cumin, sugar, mustard, chipotle, onion and garlic.
Bring to boil.
Simmer gently, uncovered, for 10 to 15 minutes, or until thickened.
Stir often during cooking.
(Sauce can be used immediately or refrigerated for up to 5 days.) 2.
Spread a little sauce in bottom of 13 x 9-inch/3.5 L baking dish.
Arrange sliced potatoes on top.
Arrange chops on top of potatoes in single layer.
Spoon remaining sauce over chops.
Bake, covered, in preheated 375°F/190°C oven for 1 hour.
Uncover and baste.
Bake for another 45 minutes.
