Salt and pepper to taste
8 center-cut pork chops
2 tbsp. salad oil
1 sm. can mushrooms
1 1/2 c. long grain rice
1 can beef consomme
1 green pepper, sliced
1 onion, sliced
1 tomato, sliced
Directions
Season pork; saute in oil until browned well.
Com- bine mushrooms, rice, consomme and 11/2 soup cans water; place in lightly-greased casserole.
Arrange chops on top.
Place slice of pepper, onion and tomato on each chop.
Cover tightly.
Bake at 350 degrees for 1 hour and 30 minutes.
