 3 medium plantains, peeled and cut into 1/2-inch slices
 Vegetable cooking spray
 Sherry1 Tablespoon
 Curry powder1/4 Teaspoon
 Ground cinnamon1/4 Teaspoon
 2 teaspoons unsalted margarine, softened

Directions

Arrange sliced plantains in a 10 x 6 x 2 inch baking dish coated with cooking spray.
Sprinkle with sherry, curry powder, and cinnamon.
Dot with margarine.
Cover and bake for 15 minutes.
Uncover and bake on additional 5 minutes.
Serve hot.
