Baked Peanut Butter Chicken Recipe
Ingredients
1 Washington fryer, cut up
1/4 -1/2 , c. flour
1 egg
1/3 c. peanut butter
1 t. salt
1/8 t. pepper
1/3 c. milk
1/2 c. dry bread crumbs
1/4 c. peanut oil
Directions
Dip cut up chicken in flour.
Blend egg with peanut butter, either smooth or chunky, salt and pepper.
Gradually add milk, beating with a fork to blend.
Dip floured chicken in peanut butter mixture, then dry bread crumbs.
Place chicken on oiled flat baking pan and drizzle remaining peanut oil over the pieces.
Bake in 375° F. oven for 45 minutes or until tender
