Baked Oxtail Ragout Recipe

Ingredients
4 pounds oxtails
1/2 cup unsifted all-purpose flour
1 teaspoon salt
1 teaspoon leaf savory, crumbled
1/4 teaspoon pepper
1/4 cup vegetable oil
1 large onion, chopped (1 cup)
1 can (12 ounces) carrot juice
1 1/2 cups water
1/2 cup dry red wine
1 bay leaf
Directions
1 Cut oxtails into uniform-length pieces.
2 Shake pieces in a mixture of flour, salt, savory and pepper in a plastic bag to coat well; reserve remaining seasoned flour (you should have about 2 tablespoons).
3 Brown pieces slowly, part at a time, in oil in a large skillet; remove pieces with a slotted spoon to an 8-cup baking dish.
4 Stir onion into drippings in skillet; saute until soft.
Stir in reserved seasoned flour; cook, stirring, just until bubbly.
Stir in carrot juice, water and wine; continue cooking and stirring, until gravy thickens and bubbles 1 minute.
Pour over meat in baking dish; add bay leaf; cover.
5 Bake in moderate oven (375°) for 2 hours, or until meat separates easily from bones.
