Baked Noodles With Chorizo Recipe
Ingredients
1/4 pound chorizo sausage (see Chorizo Filling, or use bulk pork sausage
2 to 4 tablespoons lard or oil
1 package (7 ounces) fine noodles
1/4 cup chopped onion
2 cups beef or chicken stock, or water plus bouillon cubes
1 cup cottage cheese
1 cup dairy sour cream
Dash Tabasco (if bulk pork sausage used)
Salt and pepper
Grated Parmesan cheese
Directions
Fry chorizo in a large skillet with heat resistant handle until cooked through, crumbling and stirring as it cooks.
Remove meat from skillet and set aside.
Add lard or oil to skillet to make about 1 1/4 inch layer in bottom.
Stir in uncooked noodles and onion and fry until noodles are lightly browned and onion is soft, stirring often to prevent burning.
Return cooked chorizo to skillet.
Stir in stock.
Bake at 350°F about 15 minutes, or until all liquid is absorbed by noodles.
Remove skillet from oven.
Stir in cottage cheese and sour cream.
Season to taste with tabasco, if using, and salt and pepper to taste.
Sprinkle with parmesan cheese.
Return to oven and bake about 10 minutes, or until bubbling hot.
