Directions
Scrub mussels; open shells with knife, like clams.
Remove beard; lay in baking pan.
Sprinkle with salt, pepper, and onion.
Lay bacon on top.
Sprinkle with cheese.
Bake in 300°F oven until bacon is crisp.
