Baked Mashed Potatoes Recipe

These baked mashed potatoes are baked and broiled potato recipe prepared in potato half shells. Mashed along with sour cream and tomato puree, the baked mashed potatoes is flavored with added cheese and can be served with any dish of choice.

Bake well-greased potatoes in 400 °F oven 45 minutes or until soft.
Split lengthwise; scoop out centers into mixing bowl.
Set shells aside.
Add butter, tomato puree, and sour cream to potatoes; mash until well mixed.
Season with salt and pepper; stir in cheese.
Mound mixture into shells; place on baking sheet.
Broil 10-inches from source of heat until heated through.
