Directions

Combine the ground beef, 2 tablespoons softened butter, salt, pepper, and parsley.
Soak bread in water, squeeze nearly dry, and tear up finely; add to the meat mixture along with egg yolks; mix thoroughly.
Whip egg whites until stiff, but not dry, and fold in, stirring with a fork.
Form meat mixture into 2 dozen 2 1/2-inch patties.
In a frying pan over medium heat, saute the meat in the remaining butter until browned on each side.
Transfer to a 2-quart casserole.
Discard all but 3 tablespoons of the drippings.
Stir flour into the reserved pan drippings and brown slightly, then stir in consomme; bring to a boil.
Remove from heat, stir in sour cream, blending until smooth, and pour over the meat balls.
Bake, covered, in a 350° oven for 25 minutes.
