Ingredients
1 (15-pound) fully cooked sugar-cured ham
3 tablespoons spicy brown mustard
1 1/2 tablespoons peanut butter
2 tablespoons whole cloves
3/4 cup firmly packed brown sugar
Orange slices (optional)
Parsley sprigs (optional)
Orange Sauce
Directions
Remove hard outer crust of ham.
Place ham on a rack in roasting pan, insert meat thermometer, making sure it does not touch fat or bone.
Bake, uncovered, at 325° for 3 hours.
Cool ham, cover and refrigerate 8 hours.
Score outside of ham in a diamond pattern.
Combine mustard and peanut butter, stirring until smooth, spread mixture over surface of ham.
Insert cloves in ham at 1-inch intervals.
Pat brown sugar over mustard mixture.
Bake ham at 325° for 1 hour or until thermometer registers 140°.
Slice and arrange on platter; garnish with orange slices and parsley, if desired.
