Ingredients
3 to 4 pounds white fish (striped bass or halibut)
1 can (6 ounces) tomato paste
Salt, black and red hot pepper to taste
3 carrots, peeled and cut into squares
4 medium potatoes, diced
3 stalks celery, cut diagonally
1/4 cup chopped parsley
4 garlic cloves, slivered
1 cup olive oil
1 cup water
1 can (12 ounces) white beans
Parsley sprigs and lemon wedges for garnish
Directions
Place the fish in a lightly oiled baking pan.
Season the fish inside and outside with the tomato paste, salt and black and red peppers.
Arrange the carrots, potatoes, celery, parsley and garlic around the fish.
Pour in the olive oil and water.
Bake at 350 degrees for thirty to forty minutes, basting with the pan juices two or three times during baking.
Add the white beans around the fish the last fifteen minutes of baking.
Serve cold or at room temperature.
Garnish with the parsley sprigs and lemon wedges.
