Baked Fish With Red Sauce Recipe
The baked fish with red sauce is best cooked with haddock fillets along with a sauce of sweet red pepper and red onions along with vermouth. The haddock is seasoned to taste and served withteh red sauce spooned over it. I serve this dish for both parties and family meals with watercress garnishing.
Ingredients
2 pounds haddock fillets, cut in serving size pieces
1 teaspoon salt
1/4 teaspoon freshly ground white pepper
1 lemon, thinly sliced
1 medium red onion, sliced
4 large sweet red peppers, cut in quarters
1/4 cup dry vermouth
1/2 teaspoon salt
Dry vermouth
Watercress
Directions
Sprinkle haddock with 1 teaspoon salt and the pepper; place in a lightly oiled baking pan.
Arrange lemon, onion, and peppers over fish.
Pour 1/4 cup vermouth over top.
Bake at 350degree F about 20 minutes, or until fish is tender and flakes with a fork.
Place peppers and onion slices in a food processor or blender container; discard lemon.
Arrange fish on serving platter; keep warm.
Puree peppers, onion, and salt, adding additional vermouth, if needed, to make a thick sauce.
Heat mixture thoroughly; spoon over fish.
Garnish with watercress.
