Ingredients
6 Ib large white fish
6 medium onions, chopped
3 cloves garlic, crushed
4 tablespoons parsley
150 ml dry white wine
150 ml water
2 tablespoons Pernod
4 tablespoons olive oil
1 large lemon, thinly sliced
1/2 cup butter, diced
Salt and freshly ground black
Pepper and tarragon
Directions
Combine the onions, parsley, dry white wine, water, Pernod and tarragon.
Put the fish into a large greased baking dish.
Pour over a little olive oil.
Pour over the wine mixture and cover with thin slices of lemon.
Dot with the butter and season with salt and pepper.
Bake in a hot oven 400°F (200°C) for 30 to 40 minutes or until done.
Baste regularly.
Add a little wine and water if fish becomes dry.
