Fish, whole or filleted
 
Bacon strips
 
Chopped parsley
 
Olive oil
 
Salt and pepper
 
Crumbs
 
Parmesan cheese
 
Lemon juice or white wine

Directions

Use either small fish, cleaned and boned, or fillets.
Rub the fish with olive oil or butter, salt and pepper.
Rub the fish into a mixture of fine crumbs and Parmesan cheese.
Place the fish on strips of bacon in a baking dish, add some lemon juice to the top or a little white wine.
Bake until the fish is tender.
When done pour the sauce over the top and add a little more cheese if desired.
