Baked Fish A La Spetses Recipe
The baked fish is a lovely recipe for baked fish that I often prepare for home meals. Baked with a mix of wine combined with parsley, garlic and basil for flavor along with salt and pepper, the aroma of the baked fish a la spestes is so good, you would think that this gourmet! try this recipe with a fresh and crispy side salad.
Ingredients
4 pounds fish fillets (turbot, whitefish, bass, mullet)
4 fresh tomatoes, peeled and sliced
3/4 cup olive oil
1 cup white wine
2 tablespoons chopped parsley
1 large garlic clove, crushed in a garlic press
Salt and pepper to taste
1 teaspoon basil (optional)
1 cup fresh bread crumbs
1 slice feta cheese for each portion
Directions
Put fillets into a baking dish.
In a bowl, combine tomatoes, olive oil, wine, parsley, garlic, salt, pepper, and basil.
Pour over fillets.
Sprinkle with bread crumbs.
Bake at 375°F 40 minutes.
Top fillets with feta cheese slices.
Broil 1 or 2 minutes
