 Fillets of sole
 Raw shrimp8 , peeled
 Mussels8
 Melted butter3 Tablespoon
 Sliced mushroom1/2 Cup (16 tbs), sauteed
 Lemon juice2 Tablespoon
 Dry white wine1/4 Cup (16 tbs)
 Egg yolks2 , beaten
 Cream1/2 Cup (16 tbs), scalded
 Salt To Taste
 Pepper To Taste

Directions

Lay the fish in a baking dish and sprinkle salt and pepper over them.
Cover the fish with shrimp, mussels, sauteed mushrooms and place some around the fish, add the melted butter, lemon juice and wine and bake until done, 15 to 20 minutes.
Scald the cream and add to the beaten egg yolks and pour over the fish.
If sauce is still not thickened, a little cornstarch may be used.
Sprinkle with Parmesan and a little chopped parsley.
