Ingredients
| Butter | 2 Tablespoon | |
| Soft bread crumbs | 3 Tablespoon | |
| Eggs | 2 | |
| 1 fat dove garlic, pressed | ||
| Cream cheese | 2 Ounce | |
| Smoked salmon | 2 Ounce, sliced | |
| 2 ounces aged sharp Cheddar cheese, grated | ||
| 1 ripe tomato, thickly sliced | ||
Directions
Butter casseroles (custard cups work well).
Press 2 to 3 teaspoons bread crumbs on bottom and sides of each.
Blend re maining crumbs with 1 tablespoon butter; reserve.
Break an egg into each dish.
Mash garlic with cream cheese and gently place over eggs.
Add smoked salmon, folding long strips as needed.
Grate Cheddar and sprinkle over salmon.
Put 1 fat tomato slice (from middle of tomato) on each dish (dice the rest for salad).
Crumble half the crumbs over each dish and bake in 350 degree oven for 8 to 15 minutes (depending on how you enjoy your eggs), then broil for 2 to 3 minutes, until tops are browned and slightly crisp.
Serve at once.
