4 tbsp. shortening
 
4 tbspu flour
 
2 tsp curry powder
 
1 tsp salt
 
4 cups, milk or meat stock
 
3 cups boiled rice
 
6 eggs
 
2 tbsp bread crumbs
 
Paprika

Directions

To make curry sauce, blend together the melted shortening, flour, curry powder and salt over low heat, add milk or stock gradually, stirring constantly, and boil gently for about 5 minutes.
Remove fromheat when sauce begins to thicken.
Cook rice and pile into gfeased baking dish.
Make six holes in rice and break an egg into each.
Pour curry sauce over eggs and rice, sprinkle with bread crumbs, and bake in moderate oven (350 F.) about 25 minutes or until eggs are firm
