Italian Chicken Parmigiana Recipe Video

Chicken Parmigiana is an old Italian classics. So naturally, it's one of those "go to" meals that you can always rely on. Recipe Story

Chicken Parmigiana (short from parma) is actually an Australian pub favorite. It is typically a piece of chicken breast or a slice of eggplant which is crumbed, deep fried and topped with an optional slice of ham, tomato sauce and cheese. It is then grilled until the cheese is bubbly and brown. The dish is often served with chips and a crisp salad. It is similar to a Wiener schnitzel, but comes with a topping. However, in the United States, chicken parmigiana is commonly served both as the centerpiece of a meal usually accompanied by a pasta like spaghetti and on sandwiches, especially subs. It generally consists of a fried, breaded cutlet, a marinara or spaghetti sauce, and mozzarella cheese. "Parmigiana" is often used to refer to other sandwiches with marinara sauce and cheese, such as veal parm, eggplant parm and meatball parm. Less common ingredients include shrimp and sausage and peppers. Though parmigiana means literally "from Parma" (a town in Italy), the name derives from parmiggiana a Sicilian recipe made with fried eggplant, tomato sauce and mozzarella. Even though my QuickBite recipe calls for some grated parmesan cheese, there's no actual parmesan cheese in the traditional Sicilian Parmigiana recipe.

Directions

GETTING READY
1. Preheat oven to 425 degrees centigrade.
2. In a bowl, take bread crumbs, parmesan cheese, salt and pepper. Mix it well.
3. Season both the sides of the chicken breasts with salt and pepper.
MAKING
4. Dip the seasoned chicken breasts into the egg mixture and then coat it with
the breadcrumbs mixture. Shake the excess off.
5. Place it in the baking sheet and do the same with all the chicken breasts. Bake it at 425 degrees centigrade for 8 minutes on each side.
6. Remove chicken from oven. Layer each piece with tomato sauce and then fresh mozzarella cheese.
7. Bake it for 2 minutes.

SERVING
6. Serve Italian Chicken Parmigiana with whole wheat spaghetti layered with tomato sauce and top with chopped herbs.
