Baked Chicken Parmesan Recipe

Ingredients

1/3 cup salad oil
2 broiler-fryers cut in serving-size pieces
1 teaspoon oregano
1 teaspoon salt Paprika
1 can (3 or 4 ounces) sliced mushrooms OR 1/2 pound fresh mushrooms
3 tablespoons grated Parmesan cheese

How to make Baked Chicken Parmesan

Line a shallow baking pan with aluminum foil.
Pour salad oil into pan.
Place in hot oven (425°) to heat, about 10 minutes.
Remove pan from oven.
Place chicken pieces, skin side down, in hot oil.
Sprinkle with half the oregano and salt.
Sprinkle lightly with paprika.
Return to oven and bake 30 minutes.
Turn chicken pieces; sprinkle with remaining oregano and salt, and lightly with paprika.
Bake 15 minutes longer; remove from oven.
Spoon fat and drippings in pan over chicken.
Pour mushrooms (with their liquid if using canned) over chicken; sprinkle with Parmesan cheese; bake 5 minutes longer.

I did this a little differently (not having seen this version). I did it with boneless chicken breasts (2). First, a marinade. I combined: 1 cup low fat sour cream 3 minced garlic cloves 1.5 Yb fresh lemon juice 1 Tb Spanish paprika 1 tsp crushed dried rosemary 1tsp black pepper 3/4 tsp sea salt Cover the chicken breasts thoroughly with marinade. Refrigerate overnight. When ready to cook, roll chicken breasts in panko (or bread crumbs) that have been mixed with Parmesan cheese. How much depends upon your taste. Bake in an olive oil coated bake pan until safely but not too done (depends upon how the breasts have been cut). Enjoy.
