Baked Chicken Ginger Recipe
Ingredients
| All purpose flour | 1/2 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| 1 frying chicken (three pounds), cut into serving pieces | ||
| Butter | 3/4 Cup (16 tbs) | |
| Dry sherry | 1/2 Cup (16 tbs) | |
| Soy sauce | 2 Tablespoon | |
| Lemon juice | 2 Tablespoon | |
| 1/4 cup finely chopped preserved ginger root | ||
Directions
Preheat the oven to 350 degrees.
Combine flour and salt in a paper bag.
Add the chicken pieces and shake well to coat each with flour.
Heat one-half cup of the butter and brown the chicken on all sides.
Transfer the chicken to a baking dish with cover.
Meanwhile, combine the remaining butter, the sherry, soy sauce, lemon juice and ginger in a small saucepan.
Bring to a boil, stir and pour the mixture over the chicken.
Cover.
Bake the chicken for about one hour, turning the pieces once as they bake.
