Ingredients
1 package frozen chopped spinach, cooked according to package directions, and drained well
4 tablespoons butter
1 clove garlic, crushed
Dash of marjoram
Dash of basil
4 tablespoons flour
1/3 cup heavy cream
Meat from 2 to 21/2 pound chicken cooked
3/4 cup heavy cream
3/4 tup chicken stock
Salt to taste .
Pepper to taste
1 cup grated Parmesan cheese
Directions
Cook and drain spinach.
Melt 1 tablespoon butter in saucepan.
Add garlic, marjoram, and basil; cook and stir constantly.
Add 1 tablespoon flour; mix well.
Add 1/3 cup cream and spinach; blend thoroughly.
Place mixture in bottom of 1 1/2 quart casserole.
Cover with chicken.
Melt 3 tablespoons butter in saucepan.
Add 3 tablespoons flour; blend well.
Stir in 3/4 cup cream, chicken stock, salt, and pepper.
Cook until thickened.
Pour over chicken.
Cover with grated cheese.
Bake in 375°F toaster oven for 20 minutes or until cheese is bubbly.
