1 fresh or smoked beef tongue
1/4 cup flour Water to cover
2 tbsp. fat
2 tsp. salt (if fresh tongue is used)Barbecue-Sauce
Directions
Place tongue in pan with water to cover, add salt, if fresh tongue is used, and simmer 1 hour for each pound, or until tender.
Plunge-in cold water, remove skin, and dredge with flour.
Brown in melted fat.
