Ingredients
2 ripe avocados
Salt and freshly ground black pepper
1 tablespoon lemon juice
For the filling:
100 g/4 oz crabmeat
1 tablespoon chopped spring onions
2 tablespoons diced red pepper
2 tablespoons finely diced green pepper
2 tablespoons single cream few drops Tabasco sauce
For the topping:
25 g/1 oz butter or margarine
2 tablespoons breadcrumbs
1 tablespoon chopped parsley
Directions
Preheat the oven to 200°C/400°F, Gas Mark 6.
Halve the avocados and remove the stones.
Put into an ovenproof dish.
Season the lemon juice and sprinkle over the cut surfaces.
Mix all the ingredients for the filling together and spoon in the centre of the avocados.
Melt the butter or margarine and add the breadcrumbs and parsley.
Sprinkle over the topping.
Bake for 10 minutes only.
Serve immediately.
Shellfish blends well with avocados.
It can be varied in many ways; you can use chopped prawns, mussels or smoked fish with or in place of the crab.
Add chopped olives, herbs or other flavourings that blend well with fish.
