Baked Zucchini And Parmesan Recipe
Ingredients
| Zucchini | 3 Pound | |
| Onion | 1 , chopped | |
| Garlic | 2 Clove (5gm) | |
| Parsley | ||
| Green pepper | 1 , chopped | |
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| 2 C. sour French bread crumbs | ||
| 6 eggs slightly beaten | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1. In a large pan, boil the zucchini
2. Once it is cooked, drain and mash well
3. Set aside till needed
4. Preheat oven to 350°
MAKING
5. Chop the onion, garlic and parsley till fine
6. In a large pan, heat the olive oil and sauté the finely chopped mix till tender
7. Add this mix to the zucchini mix and combine it well
8. Add grated cheese, French bread crumbs, eggs and seasonings to the mix
9. Tip the mixture into a casserole and smooth the top
10. Sprinkle over cheese and dot with butter
11. Bake in a 350° oven for about 30 mins
