Baked Zucchini Recipe
Ingredients
| Wheat germ | 1 1/2 Cup (16 tbs) | |
| Dry bread crumbs | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| 3 medium-sized zucchini, washed and cut slightly on the diagonal into 1/2-inch-thick slices | ||
| 2 eggs, lightly beaten | ||
| Butter | 1/4 Cup (16 tbs) | |
| 3 tablespoons grated Parmesan or Cheddar cheese | ||
Directions
1. Preheat the oven to 350 degrees.
2. Combine the wheat germ, bread crumbs, and salt. Dip the zucchini slices into the beaten eggs and then into the seasoned crumbs. Arrange the slices on a buttered jelly roll pan.
3. Place a small dot of butter on each slice and sprinkle with cheese. Bake for 40 minutes, or until tender.
