Ingredients

 Wheat germ1 1/2 Cup (16 tbs)
 Dry bread crumbs1 Cup (16 tbs)
 Salt To Taste
 3 medium-sized zucchini, washed and cut slightly on the diagonal into 1/2-inch-thick slices
 2 eggs, lightly beaten
 Butter1/4 Cup (16 tbs)
 3 tablespoons grated Parmesan or Cheddar cheese

Directions

1. Preheat the oven to 350 degrees.
2. Combine the wheat germ, bread crumbs, and salt. Dip the zucchini slices into the beaten eggs and then into the seasoned crumbs. Arrange the slices on a buttered jelly roll pan.
3. Place a small dot of butter on each slice and sprinkle with cheese. Bake for 40 minutes, or until tender.
