Baked Zucchini Recipe

Ingredients
2 pounds zucchini
1 cup shredded mild Cheddar cheese
1/2 cup cottage cheese
4 eggs, beaten
3/4 cup dry bread crumbs
3 tablespoons chopped parsley
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons butter
Directions
1. Wash zucchini and slice crosswise into 1/4 inch slices. (It is not necessary to peel zucchini, unless skin seems very tough.)
2. Combine cheeses, eggs, bread crumbs, parsley, salt, and pepper until evenly mixed. Layer into baking dish, alternating zucchini with sauce. Dot top with butter.
3. Bake at 375°F about 45 minutes, or until slightly set.
