Baked Zucchini Recipe

Ingredients
| Zucchini | 5 , scraped | |
| Olive oil | 3/4 Cup (16 tbs) | |
| 1 medium onion or 1 bunch scallions, sliced | ||
| Water | 1 Cup (16 tbs) | |
| Flour | 1 Tablespoon | |
| Parsley | 1 Cup (16 tbs), chopped | |
| Paprika or sliced tomatoes for garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Slice the zucchini lengthwise 1/4 inch thick.
Arrange the slices in a baking dish in layers alternately with the onions.
Sprinkle with parsley and salt and pepper to taste.
Pour olive oil and water over all and sprinkle with flour.
Bake in a 350 degree oven for about 40 minutes or until zucchini is tender.
Just before serving sprinkle with paprika or garnish with sliced tomatoes.
