Directions
Scrape zucchini and slice in half lengthwise.
Arrange zucchini in a baking pan, cut side up.
Combine tomato paste, water, and olive oil and pour over the zucchini.
Sprinkle with Parmesan or Romano and cheddar cheese.
Sprinkle with oregano and bake in a 375 de gree oven for 30 minutes or until zucchini is tender.
