Baked Vegetable Frittata Recipe

Ingredients

 
2 teaspoons olive or canola oil
 
1 Spanish or purple onion, thinly sliced
 
2 cloves garlic, finely chopped
 
3 cups vegetables, coarsely chopped
 
6 large eggs, lighdy beaten
 
1 cup sour cream, yogurt, or ricotta cheese
 
2 cups cubed day-old bread, cubed potatoes, or leftover pasta
 
2 teaspoons salt
 
1 teaspoon black pepper
 
1 teaspoon nutmeg
 
OPTIONAL INGREDIENTS
 
1 cup grated cheese
 
Salsa

Directions

1. Preheat oven to 350° F. Lightly grease an 8-inch springform pan or a 10-inch pie plate.
2. See step 2 of Omelette.
3. Combine remaining ingredients, by hand, in a mixing bowl; add cooled vegetable mixture.
4. Place mixture in pan and bake in oven until slightly firm, about 35 minutes.
