Ingredients
1 eggplant, large
Salt
1 1/2 cup onion, chopped
1 tsp low-calorie margarine
1 lb. ground turkey
2 cup tomatoes, chopped
1 tsp paprika
1 tsp ground nutmeg
1/2 tsp black pepper
Topping:
1 cup fresh bread crumbs, soft
1 tsp low-calorie margarine L
1/4 cup Cheddar cheese, grated
Directions
Wash and slice the eggplant; sprinkle with salt and set aside.
Saute the onion in margarine; add the tomatoes and saute for 3 minutes.
Add the turkey, paprika, nutmeg, and black pepper.
Cook and stir until turkey is browned.
Drain eggplant and rinse in cold water.
In a flat baking dish, alternate layers of turkey mixture and eggplant.
Cover and bake at 350°F (175°C) for 30 minutes.
Combine the bread crumbs, margarine and cheese; sprinkle on top of turkey and eggplant.
Bake, uncovered, for 10 minutes more.
