Directions
GETTING READY
1 Preheat the oven to 350°F.
2 Rinse the tomatoes well.
3 Cut them horizontally in half.
4 Lightly oil 2 wide roasting pans.
MAKING
5 In the prepared roasting pan, place the halved tomatoes, cut side uppermost in a single layer.
6 Season with salt and freshly ground pepper.
7 Sprinkle with a little olive oil.
8 Tear the mint leaves into small pieces and sprinkle these over the cut surfaces of the tomatoes.
9 Pour in just enough water, between the tomatoes, to cover the bottom of the pans and come about one quarter of the way up the sides of the tomatoes.
10 Bake in the oven for about 50 minutes.

11 Serve at once.
