 Bread crumbs1 Cup (16 tbs)

 Mushrooms3/4 Cup (16 tbs), chopped
 1 whole (about 2 1/2 pounds) sea trout (weakfish), sea bass, or red snapper, dressed

Directions

1. Preheat the oven to 375°F. In a mixing bowl combine the bread crumbs, 2 tablespoons of the melted butter, the black pepper, onion, green pepper, thyme, 1/4 teaspoon of the salt, and the mushrooms. Set aside.
2. Sprinkle the sea trout inside and out with the remaining teaspoon of salt. Stuff the fish loosely with the bread crumb mixture, and close the opening with skewers, or sew the opening with a needle and kitchen string.
3. Place the fish in a buttered 13"x 9"x 2" baking dish. Brush the fish with the remaining tablespoon of melted butter. Bake, uncovered, for 20 minutes or longer, depending on the thickness of the fish. When the fish flakes easily when tested with a fork, it is done. Serve with New Potatoes with Green Onions.
