Baked Stuffed Mackerel Recipe
Ingredients
| Butter | 15 Gram | |
| Onion | 1 Small, finely chopped | |
| 1/2 small cooking apple, peeled, cored and chopped | ||
| White breadcrumbs | 25 Gram | |
| 1 teaspoon grated lemon rind | ||
| Salt | To Taste | |
| black pepper | 1 | |
| 1 mackerel, cleaned and boned | ||
| Water | 3 Tablespoon | |
| Slices of lemon | ||
| Sprig of dill | ||
Directions
MAKING
1) In a small pan saute the onion in the melted butter and cook gently until soft; add the apple, breadcrumbs, lemon rind, salt and pepper and blend well.
2) Cut open the mackerel and place the stuffing in the centre, roll the fish; insert the cocktail sticks to secure.
3) In a small ovenproof dish lay the stuffed fish and pour over the water , cover the dish with foil and bake in a preheated oven for 20 min; remove the cocktail sticks.
SERVING
4) Garnish with sliced lemon and dill sprig and serve immediately.
