Directions

1. Start oven, set at Hot, 425° F. Rub a shallow baking pan with shortening, margarine or butter.
2. Have the fish cleaned; leave head on or remove it as desired. But be sure to take this into consideration in your estimate of baking time. Rinse and dry the fish, rub it inside and out with 1 teaspoon salt and half of the pepper.
3. Saute the onion in 2 tablespoons butter or margarine until soft. Mix the bread crumbs with the remaining salt and pepper. Fill into the fish, sew up, or skewer and place in the baking pan.
4. Bake in the preheated oven at the rate of 15 minutes per pound. Allow a little extra time if the fish head is on. If the fish does not seem fat enough, mix the rest of the butter with hot water and baste with this mixture every 5 minutes
