Ingredients

 
1 head cauliflower
 
2 tablespoons butter or margarine, melted
 
2 tablespoons all-purpose flour
 
1 cup milk
 
1/2 teaspoon salt
 
Pepper to taste
 
2 hard-cooked eggs, chopped
 
2 tablespoons chopped pimiento
 
3/4 cup chopped green onion and tops
 
1/4 cup buttered dry bread crumbs
 
2 teaspoons shredded Cheddar cheese

Directions

Cook the whole cauliflower, covered, in 1-inch boiling salted water about 20 minutes.
Remove from pan and cool.
Stir in butter or margarine with flour to make smooth paste.
Gradually add milk and cook over low heat until thickened and smooth.
Add salt, pepper, eggs, pimiento and onion to sauce.
Place cauliflower in greased 1 1/2 quart baking dish; remove top third of cauliflower by cutting off a crosswise slice.
Fill center with egg sauce and replace top.
Pour remaining sauce over cauliflower and sprinkle with crumbs and cheese.
Bake at 375° for 30 minutes.
