Baked Split Pea Soup Recipe

Ingredients
1 cup dried split peas
Water
1 lamb shank
1 carrot, diced
1 onion, sliced
1 stalk celery, sliced
1 teaspoon salt
Pepper to taste
1/8 teaspoon thyme
1/2 bay leaf, crumbled fine
Directions
Soak peas overnight in cold water; drain and reserve water. (Or cover peas with water, bring to a boil, cover, and let sit 2 hours.) Remove meat from lamb shank and cut in cubes.
Combine all ingredients (including lamb bone) in a large casserole or bean pot.
Add a total of 8 cups water, including water used for soaking peas.
Cover and bake in a 300° oven for 3 to 4 hours.
