Baked Sole Fillets Recipe

Ingredients
8 sole fillets
2 tablespoons butter
Salt and white pepper to taste
1/2 cup dry sherry
Basic White Sauce, made with 1 cup milk
2 tablespoons chopped parsely
Directions
Preheat oven 375F (190C).
Butter an 11" x 7" baking dish.
Fold sole fillets in half and arrange in buttered baking dish.
Melt butter.
Pour a little melted butter over each fillet.
Season with salt and pepper.
Pour sherry into baking dish.
Cover dish with aluminum foil.
Bake 10 minutes.
Prepare Basic White Sauce.
Remove fish from oven.
Spoon fish juices from baking dish into white sauce.
Stir until blended.
Add parsley.
Taste and adjust for seasoning.
Spoon sauce over fish.
Return to oven and bake uncovered 10 minutes longer.
