Baked Scampi Recipe
Ingredients
| Jumbo shrimp | 1 1/2 Pound, deveined | |
| Lemon juice | 2 Tablespoon | |
| 1/4 cup unsalted margarine, melted | ||
| Finely chopped parsley | 1/4 Cup (16 tbs), divided | |
| Garlic | 2 Clove (5gm), minced | |
| 2 slices enriched white bread, made into crumbs | ||
| Paprika | 1 Teaspoon | |
| Lemon wedges | 4 | |
Directions
Butterfly the shrimp by cutting lengthwise along the back, being careful not to cut all the way through; spread and flatten to form the butterfly shape.
Place 6 ounces shrimp in each of 4 individual baking dishes.
Sprinkle each with 1 1/2 teaspoons lemon juice.
In a small bowl, combine margarine, 3 tablespoons parsley, and garlic; dot each portion of shrimp with 1/4 of margarine mixture.
In another bowl, combine bread crumbs, remaining parsley, and paprika.
Sprinkle 1/4 of bread crumb mixture over each shrimp serving.
Bake at 400°F.
for approximately 15 minutes or until shrimp are pink and crumbs golden brown.
Garnish each serving with 1 lemon wedge.
