Baked Sausage With Zucchini Recipe
Ingredients
4 tablespoons butter
2 pounds zucchini, sliced
1/2 cup finely chopped onion
1 pound bulk sausage
1 teaspoon chopped fresh thyme
Salt and fresh pepper to taste
1/2 cup fine dry bread crumbs
2 eggs, beaten
1/2 cup freshly grated Parmesan cheese
Directions
Heat butter in skillet.
When hot and foamy, add zucchini.
Toss for 2-3 minutes.
Remove zucchini and add onion.
Cook 2-3 minutes.
Add sausage, thyme, salt, and pepper.
Stir to break up meat.
Put back zucchini.
Mix well.
Add bread crumbs, eggs, and 1/4 cup cheese.
Mix.
Pour into 1 1/2-quart shallow casserole or baking dish.
Sprinkle with remaining cheese.
Bake at 350° F for 15-20 minutes.
