 Salmon fillets4 Ounce
 Kosher salt- a good pinch
 Pepper1 To taste
 Watercress2 Bunch (100gm)
 Extra-virgin olive oil- 1 tablespoons
 Juice of lemon- 1/2 or 1
 White wine vinegar1 Tablespoon

Directions

GETTING READY
1. Start by preheating the oven to 400°F

MAKING
2. Lay the salmon fillets and sprinkle on both sides with a little salt and pepper, set aside and allow the fillets to reach room temperature
3. Take the watercress and rinse it under running water, pick the leaves and small, tender stems, finally place the watercress in a strainer
4. In a large saucepan, place the strainer and fill about two-thirds of water, boil it.
5. In a 3-quart bowl, fill it with ice and water
6. Meanwhile, the water in the saucepan is boiling, submerge the watercress and strainer into the saucepan for 30 seconds.
7. Lift the strainer from the water and immediately put it in the ice water, stop the cooking, and reserve the color of the cress
8. Lift the strainer again from the water bath and finally let the watercress drain
9. In an oven, place the salmon and bake for 15 minutes

SERVING
10. Garnish the watercress over the salmon adn serve hot
